Faux Smoked Wings Repurposed

I'm slightly behind on my wing reviews and a few weeks ago I bought some PC Dry-Rubbed Hardwood Smoked Wings. I just need to finish up the review.

But since then, I had leftovers that I jazzed up today. I baked the wings, then tossed them in both Piri Piri rub as well as Sriracha and Lime rub, as well as a little butter. Then I added a few dashes of a new bottle of hot sauce I saw the other day and picked up: PC Cayenne & Scotch Bonnet Wing Sauce (with another review to eventually come).

This was a really tasty combo!!!  The smoked flavoured wings, the rubs, and that Cayenne/Scotch Bonnet wing sauce was out of this world. So good.

It was a good lunch and I'm looking forward to having more!!!

Happiness Happened Here: "Bones in the Tub"

"Bones in the Tub"

Sherwood Market & Deli - Ottawa ON

Every city seems to have it's hidden restaurant treasures with tasty options that the rest of the city doesn't know about. I had driven past Sherwood Market & Deli several times but didn't think much of the place because it looks like a convenience store. But after LJ had a work function catered with Sherwood sandwiches a few months ago, she said we should check it out.

Turns out it wasn't so much of a secret to the city.

The place is very unassuming from the outside, and even inside, it just looks like a corner store ... except for the giant lunch time crowds. We've been a few times now, weekdays, weekends, and the places is always packed (to be fair, the aisles are very small and so the line snakes around the store).

The first time I went in I was glad we had looked online at the menu before going because while the process is relatively simple, unless you want tweaks, it can be confusing. There are a variety of toppings, but sandwiches come by default with egg bread, Sherwood sauce, lettuce, tomato and cheese - this is posted on the glass case, however, if you didn't already know what you were ordering, looking at the small menu and having to move quick (because the line moves quick) or having questions would feel like a faux pas with the crowd.

We knew what we wanted, and when I walked in, I just found the back of the line. There was an assembly line crew making sandwiches (at least 3 and sometimes 4) and they pop over to the line to get each order. The line may be long, but things move fast.

Photo taken from Zomato - prices are out of date

There are lots of sandwiches to choose from, but by far the most popular is the BBQ Chicken Bacon Avacado. Every time I've been in it's just Chicken Bacon Avacado after Chicken Bacon Avacado. Personally I'm not crazy about avacado, so I skip that one. The prices now have gone up since the menu above was listed, but the sandwiches clock in under $6. There are also salads and homemade desserts too, but people seem to be mostly there for the sandwiches.

Sandwiches are wrapped in wax paper and then put into a bag, and you pay at the cashier. There are a few chairs outside one can sit at, but most seem to head either back to their government office, Dow's Lake to eat by the water, or go home and eat it.

When you look at the unwrapped sandwich, you can't not be taken aback by its size. You also notice that the bread is so soft and fresh, you fear it might fall apart. The loaf is also an irregular shape - there's no typical flat bottom. This is sort of awkward to eat as a whole sandwich; you could probably ask them to cut it I guess.

As mentioned before, there are a lot of sandwiches to choose from. LJ's favourite is the Crab and Avacado with large chunks of the simulated crab and lots of avacado. I've also tried the Smoked Meat sandwich which is good but doesn't taste or look like a classic Montreal style smoked meat sandwich. I don't have photos of either of those. I do have photos of my favourite, the BBQ Chicken and Bacon.

Here's the breakdown of the sandwich; Soft, fresh egg bread, slice of I think swiss cheese, sliced deli BBQ chicken, extra Sherwood sauce, tomato, crispy bacon, and shredded lettuce.

When I first was ordering, I wasn't sure if the BBQ Chicken was from a roasted chicken or like a deli meat chicken. Turns out it is the latter (the deli sells the cold meat just like a regular store) but it's piled on pretty good and seems to be chopped up.

First, the sandwich feels, smells and tastes fresh. That egg bread especially. There's a lot of lettuce on there, but it doesn't overpower the sandwich. The bacon might be thick cut? It's served room temperature on the sandwich (they must cook it in big batches) but its crispy yet pliable, and tastes soo good. Now the Sherwood sauce on the sandwich, that is good stuff. It's a mayo based sauce, very creamy, maybe it has lemon juice? It's hard to define because its not bold in flavour, but rich in creaminess. I have to ask for extra it's that good.

So this place is not so secret after all. But I would say it doesn't have enough hype about it out there. This sandwich seems like something you'd make at home, but tastes better. There's nothing bold or particularly flavourful on it's own in there, but together they create a harmony of the mouth. It tastes fresh, crunchy, soft, creamy. It's just a sandwich, but dang it's a good sandwich!

#fryday = O'Grady's Outpost Dry Sriracha Fried Wings

The key to O'Grady's wings is that you have to order them sauce on the side because they can get mushy. But the dry rub wings are so crispy and good. I can feel the crispy skin crackling as I pull the wing apart. I love that sound.

#tbt = Dingaling's Butter-Face

Those are some gosh darn good wings. I wish they opened a location in Ottawa. I also wished they had better hours - the times I drive through Kingston and could stop, they aren't open. #firstwingproblems

TOPPERS PIZZA - Ottawa ON

I have a small list of places that I really want to try for wings. A subset of that list are places that I am curious to try, but not super motivated to. Topper's Pizza was on that subset; I have seen this small pizza chain for years but never sampled their wares. Until now.

I stopped in to try some wings for lunch at their Merivale location (they list the location as Nepean instead of Ottawa). This is a chain that I am not that familiar with - they aren't big compared to say a Pizza Pizza or a Dominos and they don't advertise in any way that I've seen. They've been around since 1982 and have more than 30 locations, but I have never tried their pizza before. Fun fact, I thought they were called Topper's because of the toppings on the pizza, but the founder's name is Ron Toppazini and the first location was called Mr Toppers. Huh.

I went in to the very large open store front. There is nothing in there except a few seats for waiting so all the space just seems weird. I was greeted by one of the delivery drivers behind the counter - he was holding down the fort while what seemed like the only employee Priyanka was running around making all the food. He mentioned she would just be a minute as their call order system was down and that she was taking all the orders over the phone. She was very friendly and apologized for my small wait - considering how much she was doing I was impressed with the service.

I had scanned over the menu and saw a good size section on wings and boneless breaded chicken. I made my pick and after about 10-15 minutes I had my take-out box. While I was waiting I noticed their Mission Statement on a placard on the counter:

"To create VERY satisfied and loyal customers who return often and recommend us to others"

It's a great mission statement - simple and effective. I would see if I was VERY satisfied customer, or would return often or recommend to others.

When I got back to the car I opened my pizza box I looked at my wings in crumpled foil wrap - this makes me nervous as a wing container as it can lead to the steaming of wings, especially on a longer trip. I unwrapped them and several things came to my mind all at once: charred wings, fatty wings, tons of sauce, tiny wings, meaty wings. What were they going to be like?

The wings come in multiples of 10 (10,20,30) but I went for their Regular 10.

The length of these wings were all pretty small. The meatiness size of these wings were all over the place and wildly inconsistent. One drummette (seen above) was massive and meaty, while others were scrawny and thin.

One of my biggest problems with these wings was the texture. These are a baked wing and this does not produce a crispy skin at all. To make matters worse, several of the wings are fatty (see photo above and wing on the right). I liked that they looked charred, but these were a soft mess. Add the fact that they serve these wings with a generous amount of sauce and these were a mushy mess.

I appreciate the amount of sauce though. The other positive of this is that the wings are very tender. The meat just pulls apart - I could easily just suck the chicken off the bone.

The hot sauce was sweet and spicy. The hot aspect was not like a regular cayenne hot sauce (like Frank's) but something all together different. The sweet side was like a honey sweet. Both had an artificial taste, but it wasn't bad. There was a little sting, and little sweet.

Oh and this is a staining sauce for sure so watch out. I had to scrub and scrub my hands with soap and water to get the stains off my hands!

FINAL SCORE:
Just to put it bluntly, these are not wings I would bother with again. There was generous amounts of hot sauce that was sweet and slightly spicy but the wings were small (yet some meaty) and baked which made them soggy, coupled with some being fatty; a terrible texture. Tender, but just a mushy mess. The service was friendly, and maybe the pizza is great. But the wings were not and that's just kind of sad. 8.5/14

A Chicken Wing Story: Recreating Chaps wing Sauce

As Lord of the Wings I get a bunch of e-mail. I get a lot of spam. I get a lot from people who confuse me with the chain Lord of the Wings, food trucks named Lord of the Wings, or even products and restaurants that I have reviewed. But I also get e-mails from folks trying to track down information about closed restaurants or how a particular place makes a sauce. Recently I received an e-mail from Steve H, who wanted to locate some Laredo Hot Sauce to help recreate his favourite wings from a now closed restaurant, Chaps.
"Chaps in Burlington was my wing place for 30 years.(even though I live 45 minutes away in Paris).., and my 20 year old son Spencer had become a fan too....my heart was heavy when I saw they had retired and shut it down."

Chap's was a Western themed bar in Burlington Ontario, but they were well known for their wings. Seeing reviews online, people raved about their wings. I can't believe I had never heard about this place.

Looking at their menu, they have some very tasty sounding wings. I can see why a lot of people liked it there. But unfortunately this past May 2018, Chap's closed:

It sad when a favourite wing place closes, so I understood Steve's request:

"Hi Lord,
Given your title, you will hopefully relate to my dilemma:
My favourite wing place for the last 30 years was Chaps in Burlington. Loved their wings, Loved their Medium Sauce. Sadly, I found out that they recently closed for retirement without allowing me a final feast.....I am in withdrawal. Their medium sauce was 75% Select BBQ sauce (which I have found) and 25% Laredo hot sauce/wing sauce...the large jug , not the little hot sauce bottles. (A few years ago I bought a jug of each sauce from the bartender).

I googled Laredo sauce and found your 2008 posting about Costco. Do you know where I could find that sauce today?
Thanks
Steve"

Always wanting to help out a wing lover in need, I set about to try and track down Laredo sauce. Steve was referring to my 2008 review of the Laredo jug I had from Costco. Costco does not carry it anymore, but I was able to contact Upper Canada Food Group Ltd, who are the distributors of the sauce. They told me that they stopped selling the sauce to the public a few years ago, with only one place in Ontario still selling it  https://mvrwholesale.com/ in Toronto Ontario. The downside is that this Cash & Carry is not open to the public.

This didn't slow Steve down though! Over the Father's Day weekend, he and his family set out to recreate their favourite wing flavour:

"My wife Christine  spent Father’s Day making home made “boneless” wings, while Spencer and I experimented with the sauce....it was a great Father’s Day."

I love how they set out to experiment with different sauce mixtures to try and recreate the Chap's sauce. Those wing sauced boneless wings look mighty good no matter how close a clone this recipe was or not!

Steve is going to set out to try and get some of the Laredo from some chef friends that can shop at the MVR. I hope he is able to recreate the wings he once had. RIP Chaps.
