WWWWWW #82 - Cooking with Your Coffee Maker - Super Bowl Sunday Wings

Alton Brown is strongly against 'unitaskers'; kitchen gadgets that only have one use in the kitchen and take up valuable real estate in the drawer. Some people take that philosophy to the next level. That would be the writer at Cooking With Your Coffee Maker.

The actual goal for this blog was more about helping a nephew in the army:

"The idea of Cooking With Your Coffee Maker started with one of our nephews complaining that the he preferred MRE’s to the food in the mess hall in Afghanistan.
Since a coffee maker was the one appliance that all the soldiers have, I began to wonder if the water from a coffee maker would get hot enough to make instant oatmeal. You see I don’t own a coffee maker because we are not coffee drinkers in my house, so I went out and bought my first coffee maker."

So, what kind of recipes can you make in a coffee maker? People have heard about ramen and boiled eggs, but can you go beyond that?


Cupcakes? Sure why not!



Corn dogs? Apparently yes as well.


But we are all thinking ahead and wondering . . . you can't possibly do chicken wings in a coffee maker? Surely not . . .



... ok, they made Super Bowl Sunday Wings in the coffee maker. Did not see that one coming.



They didn't go much into details but it seems to involve 'simmering' the wings with a little water - then add chicken wing sauce. 

I won't lie, this does not appeal to me because I can't imagine the wings getting crispy, but instead just getting mushy in sauce. But I haven't tried it, so who knows.

Kitchen Sink Wings #2




These were some "Kitchen Sink" wings I made the other day. I call them kitchen sink because I was just throwing stuff around the kitchen to make the sauce.

First I was baking some Pinty Pub & Grill Whisky Mustard wings, sans the mustard pack (I like the sauce, but these crispy breaded wings are great on their own*). I set the oven to broil and at 450 degrees, flipping the wings once until they were hot and crispy.




In a glass measuring cup I melted some margarine (about a tablespoon plus a little extra). Then I started dashing in:

  • 3rd Degree sauce
  • Worcestershire Sauce
  • Liquid Smoke
  • Sriracha Dry Seasoning
  • Vinegar
Put that in the microwave for 15 seconds, stir, then again. 

The wings came out, I blotted some of the grease with paper towel, then tossed the wings with the sauce.



I also threw together some garlic cheese toast. I had leftover hot dog buns (extra soft), slapped some garlic butter and shredded some marble cheese. I put these in with the wings after their second flip. The buns were toasty but soft, buttery and cheesy. Spot on.


The wings turned out great. Spicy but a lot of depth. Easy to make - just threw this together really quick. What I like is that the sauce just wraps the crispy breaded wings like a velvety blanket of goodness. Kitchen Sink Wings #2**, when you need wings in a pinch.


* I thought I had done a review of these wings earlier this year, but I've dropped a lot in the recent past. So maybe I will post one of the mustard whisky wings in the future . . .

WWWWWW #81 - Pokemon & Wings

I do not play Pokemon. I have not watched the show. I have not played the card game. I have not played the video games. But there is no denying the phenomenon that has been Pokemon Go. It has only been out for like 2 weeks, but a day does not go by where I watch people stumble in the streets, run in packs, or sit at lunch and get some Pokemon. I watched a 40 year old man hold up a line at Costco as he tried to capture one on the conveyor at the check-out.

That being said, there is at least one thing that links chicken wings and Pokemon; the slogan. "Gotta Catch'em all!" - that's how I feel about chicken wings. But surely there's more of connection?

I will admit, when I think of sunflower seeds, I don't think Buffalo wings. But Bigs does. Bigs is an American sunflower and pumpkin seed company with an 'x-treme' approach. You don't just buy and eat the seeds, you are part of a larger community:

Zazzle carries these Iphone covers in a variety of wings colours and styles and they range from about $40-$70, which seems steep from me. But then again, I don't have an Iphone.

Would you use one of these? Is that a fair price point? Should there be a Lord of the Wing phone cover?



DOUBLE SRIRACHA WINGS


Two is better than one right?



Double Dare was a great game show...


Doublemint was a great gum...


And Double Dragon was an awesome video game.



So I headed into the LOTW Test Kitchen to come up with a new wing recipe with that in mind. I was in the mood for a spicy wing that had some flavour, but was different than your typical Buffalo wing. I looked in the fridge, and I saw Sriracha sauce. Then I looked into the spice cabinet . . . more sriracha. That is how Double Sriracha Wings were born.



INGREDIENTS:

  • 1 lb of fresh wings
  • 2-3 teaspoons of sriracha powder
SAUCE
  • butter/margarine
  • 3 tsp of buffalo sauce powder
  • 2-3 dashes of vinegar
  • 3 healthy squirts of sriracha sauce
  • 2 tbsp of honey

INSTRUCTIONS
  1. Deep fry wings.
  2. While wings are frying, melt butter in sauce pan on medium-low. Stir in remaining ingredients until well mixed.
  3. Drain wings, toss in sriracha seasoning, then toss in sauce mixture.
  4. Eat immediately; enjoy!



The last time I was in the USA back in December, I picked up a bottle of Sriracha seasoning. Do you know where? No not the grocery store, or even a kitchen store. Burlington Coat Factory. Go figure. Anyway, this is a great little spice seasoning for all sorts of dishes.


Also on my spice list, I had a bag of Buffalo Style Chicken & Wing Sauce Mix I had picked up at Bulk Barn. This seemed like a great time to try it.


I melted a bunch of margarine (I don't know how much, I just eye balled it), then tossed in the buffalo sauce mix. I added a bit of vinegar and stirred. The mix was great, but the sauce was really salty, so I added some honey to sweeten things up. Oh and I added a bunch of sriracha (Huy Fong rooster brand of course). This sauce is very smooth, buttery and just that nice warm heat that sriracha brings.


I was lazy and left my fresh wings from the butcher shop whole when I deep fried. After draining the oil, I hit them up with the dry sriracha seasoning. These wings came out crispy and golden and were looking good.

I should mention I double fry my wings; I put them in for about 8-10 minutes at 315 in the deep fryer, let them rest, then fry them again at 350 for about 5 minutes. I find this helps cook the inside, but the second frying makes for perfectly crispy skin afterwards.


Here is the wing just fried and spiced on its own. This was a good dry wing on its own with a salty sriracha-ish flavour. I ate part of it and thought this was good. But I was looking for great. I was looking for double sriracha.


The sauce, that's where these wings were at. The sauce.


Toss toss toss and we have magic. Ya that wing on the right looks good, but doesn't the more than double wings on the right seem 2x as good? Yes, yes they do.


These wings were right on. Crispy, saucy and a nice heat. It had that hint of Buffalo style sauce, but the added sriracha that has heat, but a warming heat not a sting or burn. There were layers of flavour and I was just pleased as punch.



Or just very hungry. And now I want to play Double Dragon. Ok I'm going to finish these Double Sriracha Wings and play some Double Dragon.
